Description

You might say that never happens? But it does! After you make the Easter cake using this recipe, you'll always make only your own homemade one and no store‑bought ones! You can use either freshly squeezed orange juice or ready‑made. Serve it cooled or slightly warm.

    Prepare all the necessary ingredients.

    Wash the raisins thoroughly and soak them in orange juice for 1 hour.

    Then drain the juice, pat the raisins dry with a paper towel, and lightly dust them with flour.

    Prepare the starter. In warm milk (temperature comfortable to the touch) add the yeast and 2 tsp sugar (from the total amount of sugar). Place the starter in a warm spot for 20–25 minutes, so the yeast can start working.

    Beat the yolks with salt, sugar, and vanilla sugar until fluffy.

    Add the zest of one orange and softened butter to the mixture.

    Beat again until smooth.

    Pour the ready starter into the butter‑egg mixture.

    Whisk the mixture again.

    Sift the flour. Gradually add it to the prepared mixture, knead the dough with a spatula. It will be like very thick sour cream. Cover with plastic wrap and place in a warm spot for 40–45 minutes.

    When the dough has risen, add the raisins.

    Mix again with a spatula so that the raisins are evenly distributed. Cover with plastic wrap and let it rest for another 40-45 minutes in a warm place.

    Grease the molds with vegetable oil. Fill the molds with batter to 1/3 or 1/2 using a spoon.

    Cover with a towel and place in a warm spot for 15–20 minutes.

    Bake the kulich at 170 °C for 15 minutes, then reduce the temperature to 160 °C and bake for another 15 minutes. When you turn off the oven, leave the kulich inside for another 2–3 minutes. Then remove and cool in the pan or without the pan.

    I used ready-made glaze. I diluted it according to the instructions, filled a pastry bag with the glaze, and drizzled it over the cooled paschas.
