Profiteroles with whipped cream
Description
The pastry is prepared simply and quickly. Profiteroles are a French cuisine dessert and consist of small balls with whipped cream inside. Because of the cream they become tender and simply melt in the mouth. The top can be drizzled with white chocolate, sprinkled with nuts, coconut flakes, or powdered sugar. Serve cooled or slightly warm.
Instructions
- 1
Step 1

Prepare all the necessary ingredients for making profiteroles with whipped cream.
- 2
Step 2

Pour water and milk into a pot, add salt and sugar. Add the butter to the pot and set it over medium heat, bring to a boil and dissolve the salt and sugar.
- 3
Step 3

Reduce the heat to low, add sifted flour to the pot and stir quickly until smooth. Continue cooking, stirring, for 2 minutes. The dough should gather into a lump. Remove from heat and let cool to a warm state.
- 4
Step 4

Crack one egg into the pot with the dough and mix well until the mixture is smooth.
- 5
Step 5

Add the second egg and stir again until smooth.
- 6
Step 6

Crack the third egg into the pot with the batter and mix thoroughly until smooth.
- 7
Step 7

Add the final egg and mix everything thoroughly until smooth.
- 8
Step 8

The dough should be neither liquid nor too stiff. It should stretch over the spoon in a big wave when you lift it. Turn the oven on to preheat to 180 degrees.
- 9
Step 9

Transfer the dough into a pastry bag fitted with a star tip. Pipe the profiteroles onto a baking sheet lined with a silicone mat.
- 10
Step 10

Place the baking sheet in a hot oven and bake for 40 minutes until golden brown. While baking, do not open the oven under any circumstances. The profiteroles will collapse immediately and will be unsuitable for filling with cream. Remove the baking sheet and let the profiteroles cool completely.
- 11
Step 11

Pour the cold cream into a bowl and whisk on medium speed until soft peaks form. Add powdered sugar without stopping the whisking.
- 12
Step 12

Continue beating until the cream is fluffy and airy.
- 13
Step 13

Transfer the cream into a pastry bag with a fine tip and fill the interior of the profiteroles with whipped cream.
- 14
Step 14

Melt the chocolate in a double boiler. Dip the tops of the profiteroles in the chocolate, then immediately sprinkle with shredded coconut. Let it sit until the chocolate hardens.
- 15
Step 15

The pastry is ready. Serve with tea.
