
Profiteroles with berries
Description
Any fresh or frozen berries that do not release too much juice are suitable for profiteroles. The dough is ready when it no longer sticks to the spoon and pulls away cleanly from the sides of the pan. Do not add all the eggs to the dough at once; it will be very hard to mix until smooth. While baking profiteroles, do not open the oven for the first 15–20 minutes, or the profiteroles will collapse. They can be served with tea or coffee.

Prepare all the ingredients you need for profiteroles with berries. Wash and dry the berries; I used black currants and strawberries.

Pour water into a saucepan and bring to a boil over medium heat. Salt the water, add the butter, and cook until smooth and uniform.

Add the sifted flour to the saucepan and stir briskly until the mixture forms a uniform dough.

Continue cooking the dough, stirring constantly, for 1–2 minutes. Remove from the heat and cool to room temperature.

Add the eggs to the dough one at a time, mixing until smooth after each addition.

Line a baking sheet with parchment paper or a silicone/non-stick baking mat. Pipe the profiteroles from a piping bag or shape balls with a tablespoon.

Put the profiteroles in a hot oven and bake at 180 °C for 30 minutes, until golden brown. When the time is up, take them out of the oven and leave them to cool completely.

Place the berries in a bowl; if they are large, you can chop them. Add sour cream and mix. That way the berries will hold together better. But you can also skip it.

Cut off the tops of the profiteroles and fill the hollow centers with berry mixture. Cover each with its cut-off top.

If desired, dust the profiteroles with powdered sugar and serve.

Remove from the oven and serve warm or at room temperature.
