
Profiteroles with cottage cheese cream
Description
Delicious baked treats for the whole family. Light cream puffs filled with a delicate cottage cheese and cream mousse — so tasty! I often make profiteroles with various fillings instead of a festive cake. You can add vanilla sugar, crushed nuts, or raisins to the filling. A very delicious option is whipped cream mixed with sweetened condensed milk. Feel free to experiment!

Put the butter and water into a saucepan. Bring to a boil over medium heat.

Add the flour and beat. The dough should come together into a ball and easily detach from the sides of the pan.

Remove the dough from the saucepan and let it cool slightly. Beat the dough using a stand mixer at medium speed for one minute—it will cool down faster. Add the eggs one at a time. You will notice that the dough's texture changes after adding each egg. It should become smooth and glossy. Increase the mixer speed to maximum and beat for another minute.

Place the dough into a pastry bag with a large tip. Pipe profiteroles onto a baking sheet lined with parchment paper.

Bake profiteroles for 15 minutes at 220 degrees. Do not open the oven door during this time. Reduce the heat to 160 degrees and bake for another 15 minutes. Turn off the oven and slightly open the oven door so that the profiteroles cool down evenly, without sudden temperature changes.

Let's prepare the filling. In an immersion blender, blend the cottage cheese, cream, and sugar. Fill the profiteroles with the cottage cheese cream using a pastry syringe.
