
Profiteroles with herring
Description
Homemade baking for tea. Appetizer profiteroles are, without doubt, a festive dish, though you can also treat your loved ones on a weekday to such a tasty, elegant snack. They are made with meat and liver pâtés, red and black caviar, and salads. Today our filling is herring with apple, onion, and egg. Very tasty—I recommend it. Serve warm or chilled. Perfect with tea.

Prepare the ingredients for making profiteroles with herring.

Prepare the choux pastry for profiteroles. Pour water into a saucepan and add the pieces of butter.

Bring the water to a boil. The oil must dissolve completely.

Pour the flour and a pinch of salt into the saucepan.

Quickly mix the dough. It should be lump-free, smooth, and evenly consistent. Cool it to room temperature.

Add the 3 eggs one at a time, mixing thoroughly after each one. You can use a mixer.

Using a spoon or a piping bag with a tip, pipe or spoon the dough onto a baking sheet lined with parchment paper.

Bake the profiteroles for the first 15 minutes at 190–200°C. Then lower the temperature to 175–180°C and bake for another 15–20 minutes until done, until the profiteroles are golden and hollow inside.

Prepare herring fillet, an apple, a hard-boiled egg, and onion for the filling.

Using a blender or food processor, blend these ingredients into a mixture resembling pâté.

Cut a small slit in the bottom of each profiterole and fill with the filling using a teaspoon.
