Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

Pour water and milk into a saucepan and heat almost to the boil. Add 100 grams of butter cut into pieces and melt the butter.
- 3
Step 3

Place the sauté pan back on the heat, warm it, then add all the flour at once and mix vigorously.
- 4
Step 4

The dough should gather into a ball and pull away from the sides of the bowl. Remove from heat and cool slightly.
- 5
Step 5

For convenience, crack all the eggs required by the recipe into a glass or measuring cup.
- 6
Step 6

Add the eggs to the dough one at a time, mixing each one in thoroughly. Add each next egg only after the previous one is fully incorporated.
- 7
Step 7

Transfer the dough to a piping bag and pipe it onto a baking sheet, spacing portions apart.
- 8
Step 8

Bake the profiteroles at 190 degrees for 30–35 minutes, then reduce the temperature to 160 degrees and bake for another 10 minutes.
- 9
Step 9

While the profiteroles are baking, prepare the buttercream. To do this, first beat room-temperature butter until light and fluffy. Then gradually pour in sweetened condensed milk, which should also be at room temperature. Continue beating until fluffy.
- 10
Step 10

Melt 50 grams of chocolate in short bursts in the microwave or over a double boiler.
- 11
Step 11

Slightly cool the chocolate, then add it to the cream.
- 12
Step 12

Whip the cream with the chocolate until smooth and combined.
- 13
Step 13

Profiteroles can be filled with buttercream in two ways—by piercing them or by making a slit. This recipe uses the second method.
- 14
Step 14

Fill the cooled profiteroles with buttercream.
- 15
Step 15

Drizzle half of the profiteroles with melted white chocolate and sprinkle with almond flakes.
- 16
Step 16

Drizzle the second half of the profiteroles with dark melted chocolate and sprinkle with chopped hazelnuts.
- 17
Step 17

It turned out a lot of delicious profiteroles that will not go unnoticed on a festive or buffet table.
