Profiteroles with avocado cream and salmon

Goes wonderfully with tea and coffee. If you have a small piece of salmon, don’t rush into plain sandwiches—make profiteroles with avocado cream and cream cheese. You’ll get plenty, they’ll look gorgeous and taste great, and you’ll still have fish left over for sandwiches. Follow the step-by-step recipe and cook something delicious, beautiful, and budget-friendly.

    Prepare the ingredients.

    Pour the milk and water into the saucepan, add a pinch of salt, and heat. Add the butter, melt it, then heat until it comes to a boil, but do not let it boil.

    Add all the flour at once to the milk–butter mixture.

    Place the sauté pan over the heat and vigorously stir in the flour. Leave it on the stove a little longer, stirring continually; the dough should come together into a ball and pull away from the sides of the pan.

    Cool the dough slightly, then beat in the eggs one at a time. Add each successive egg only after the previous egg has been fully incorporated into a smooth mixture.

    Transfer the dough to a piping bag and pipe it onto a baking sheet; if you don’t have a bag, you can spoon it on instead. Preheat the oven to 190 degrees and bake for 30 minutes, then lower the temperature to 160 degrees and bake for another 10 minutes. Don’t take the finished profiteroles out of the oven right away—leave them in the turned-off oven for about 10 minutes.

    While the profiteroles are baking, prepare the avocado cream. Cut the avocado in half and remove the pit.

    Transfer the avocado flesh into a bowl with a teaspoon and drizzle with the juice from half a lime.

    Add creamy curd cream cheese to the avocado flesh.
