
Profiteroles with mushrooms
Description
Homemade pastries for tea. In the filling, besides fried mushrooms, I also add hard cheese. It not only adds flavor but also gives viscosity. In addition, you can use cream cheese or processed cheese; it will be great as well. It's best to fill the profiteroles right before serving, while you can bake them in advance. Serve them cooled or slightly warm.

Prepare the ingredients.

First of all, let's work on the dough. In a saucepan, combine butter, salt, and water. Place it on the heat and bring to a boil.

Add the flour, remove from heat and mix thoroughly.

When the dough has cooled slightly, beat in the eggs one at a time and start kneading until smooth.

The choux pastry should be smooth.

Place small dough balls on a parchment‑lined baking sheet. Put them in a preheated oven at 190 °C.

While the profiteroles are baking, you can work on the filling. Cut the mushrooms and onion into cubes, sauté in a pan with vegetable oil until browned. Add salt and pepper to taste.

Grate the cheese using a fine or medium grater.

Add the sautéed mushrooms with cheese and stir. The filling is ready.

In 45–50 minutes the profiteroles will be ready. They should rise and turn golden.
