Step 1

1. Prepare the dough without a starter. Crumble the yeast (only fresh) into a bowl, add warm water and vegetable oil, and mix well. Gradually add sifted flour and knead into a firm dough. Continue kneading until the dough no longer sticks to your hands. Cover the dough with a napkin or towel and let it rise in a warm place for about 40 minutes.

Step 2

2. While the dough is rising, prepare the filling: peel and chop the mushrooms (into small pieces). Finely chop the onion. You can use both button mushrooms and wild mushrooms.

Step 3

3. Sauté the onion in a hot skillet, add the mushrooms and simmer for about 15 minutes with the lid closed. Then let the mushrooms cool.

Step 4

4. When the dough has risen, divide it into two parts (one part should be twice as large as the other). Roll out the larger part of the dough into a round sheet to fit the size of the baking tray. Grease the tray with vegetable oil and place the dough round onto it. Gently press the dough round against the tray.

Step 5

5. Place the cooled mushrooms on the cake layer, spreading them evenly across the layer (leaving about 1 centimeter around the edges).

Step 6

6. Place the other crust on top of the filling, seal the edges, and brush with egg yolk. Bake the pie over low heat for about an hour, turning it occasionally. Then remove from the oven and let it cool.
