
Plain dough for buns
Description
The recipe won't take much time. In the old days, this dough was used to bake kurniks—wedding pies—and during holidays, kaladki (pies made from unleavened dough) were baked and served to wish prosperity, abundance, and a good harvest. Serve cooled or slightly warm.

To make dough for buns, we need to take a deep bowl, pour the flour into it in a mound, make a depression in the center, break 2 eggs into it, then add butter, sour cream, salt, and sugar.

Now we need to knead the dough. Once the dough is kneaded, roll it into a ball, cover the bowl with a towel, and refrigerate for 30–40 minutes.

While the dough is "resting," we will prepare the filling for the buns that we will bake using our shortcrust dough. To do this, we will wash and clean the green onions, parsley, and dill.

If you haven't already guessed what kind of buns we're going to bake, let me tell you: buns with egg and greens. I love baking these buns in summer, when fresh greens grow right outside my window and there's no need to buy anything. So, finely chop the greens and set them aside as well.

Another ingredient that must definitely be included in these buns is rice, which we need to boil. At the end of cooking, add olive oil to the rice and mix it well.

While the rice is cooking, place a small pot on the stove to boil the eggs. Once the eggs are cooked, cool them down and peel. Then finely chop them.

So, the entire filling is ready, we mix it in a bowl and add salt and pepper to it.

We will bake the buns in the oven, so grease the baking sheet with oil beforehand. Break 1 egg into a small bowl and beat it together with one tablespoon of water.

Roll out the dough to a ½ cm layer, cut out circles using a special cutter or a glass, or roll the dough into a long rope and cut it into small pieces. Then roll each piece with a rolling pin. Brush the surface of the rolled dough circle with a mixture of beaten egg and water.

Now, place the filling on each circle. Take enough filling so that there's still enough dough left to seal the edges.

Seal the edges of the pie, then brush the top with a mixture of beaten egg and water using a brush for a shiny finish. Place the pies on a baking sheet with about 2 centimeters of space between them and bake in the oven until golden brown, for 15–20 minutes. The pies can be placed seam-side down, or you can shape them decoratively and bake them that way.

Carefully transfer the finished buns to a plate and brush each bun with butter. Using the non-yeast dough, you can prepare buns with any other filling, for example, with cabbage or potatoes.
