It is very important that the butter does not leak out from any sides when you roll out the dough.     6. Use a rolling pin to spread the butter evenly across the entire square, ensuring it is evenly distributed. Then refrigerate for half an hour.

Then remove it, without unfolding, start rolling it out again in all directions. Once again gather the dough into a "packet" and return to the refrigerator for an hour.
