
Herring Preserves
Description
It works both for holidays and for everyday meals. The recipe offered here helps fix an unpleasant herring taste. I should also note that the preserve can be made from frozen herring: thaw it first, increase the salt to 1 tbsp, and keep it in the refrigerator for 3 days. Serve the appetizer at the table.

Prepare the necessary ingredients.

Fillet the herring (remove all small bones).

Mix the vinegar with the sugar and salt, place over heat, bring to a boil, and cool.

In a saucepan, combine the butter, half the specified amount of coriander and allspice. Place over heat, bring to a boil, and remove from heat. Let cool.

Take a wide dish. It is very important that the herring fits in a single layer. Crumble bay leaves on the bottom of the dish. Arrange the cut herring (each piece no more than 40 grams), sprinkling with coriander and allspice.

Using a spoon, pour the chilled marinade over each piece.

Likewise, pour in the oil.

Gently shake the mold with the herring so the oil spreads evenly. Cover with a lid and refrigerate for 24 hours.
