
Festive cake with cottage cheese cream
Description
Delicious baked treat for the whole family. The diameter of my baking pan is 20 cm. For the cream, use soft, spreadable cottage cheese. If you're using homemade cottage cheese, blend it thoroughly with a blender first, then whip it with cream to avoid lumps. You can use any seasonal fruits and berries, adjusting their quantity—this will only affect the cake's height. However, you must soak the cake layers; don't skip this step, otherwise the cake will turn out dry. Good luck!

1. Prepare the ingredients for the sponge cake and the cream, but the decorations will be needed the next day.

2. For the sponge cake, separate the yolks from the egg whites. Beat the egg whites with a mixer until stiff peaks form. Add the sugar and then the yolks one at a time, without turning off the mixer.

3. Add the flour in parts, I mix it with a mixer at low speed.

4. Grease the pan with butter and line it with parchment paper. Pour in the batter. Cover the pan with foil; this will help you bake a perfectly even sponge cake. Bake at 180°C for 35–40 minutes.

5. Let the sponge cake cool in the mold. Then carefully remove it.

6. Pour a small amount of boiling water over the gelatin. Let it sit for about 5 minutes to soften and dissolve. Stir.

7. Combine the cottage cheese with powdered sugar and cream. Choose the cream fat content to your taste. Taste for sweetness and add more powdered sugar if needed. Beat the mixture with a mixer until it reaches a creamy consistency.

8. Peel the banana, cut it into cubes. Mix the cream with the banana and gelatin.

10. Cut the cooled biscuit into two parts. Place inside the ring. Soak with sweet syrup or jam.
