
Festive Aspic from Pork Trotters, Knuckle, and Chicken
Description
A delicious appetizer for any gathering. If the broth turned out very cloudy, you can clarify it using a beaten egg. It should be poured into the boiling broth in a thin stream, and then strained through cheesecloth. You can garnish not only with carrot, but also with boiled eggs, cranberries, or other vegetables. The appetizer is ready. Serve immediately.

Prepare all the necessary ingredients for making festive aspic from pig's feet, pork knuckle, and chicken.

Cut the legs in half and place them together with the shank in a deep pot. Pour cold water over everything and leave in a cool place for 12 hours, changing the water 3 times.

Rinse the shank and trotters and place them in a heavy-bottomed pot. Cover with water and bring to a boil. Boil for five minutes, drain the broth, then rinse the pork and the pot.

Pour cold water over the knuckle with trotters so that it covers the pork, and place over medium heat. After it comes to a boil, skim off the foam, reduce the heat, and simmer for three hours without letting it boil and without covering with a lid.

Peel the carrots and place them whole in the pot. Cut the onion into several pieces, char them in a hot, dry skillet, and add them to the pot with the meat. Season everything with salt, add pepper and a bay leaf, add the chicken, and cook the aspic for another 1.5 hours.

Remove the pot from the heat, remove the bay leaf, and let it cool.

Chill the attractive mold you will use for the aspic in the refrigerator ahead of time. From boiled carrots, cut circles and shape them into daisies; arrange them on the bottom of the mold. On top, place sprigs of herbs and pour in a little broth. Return the mold to the refrigerator until set.

Remove the meat and chicken from the broth, then add finely chopped garlic to it. Mix everything together, add more salt if necessary, and let stand for 15 minutes.

Separate the meat from the bones and cut it into small pieces.

Strain the broth and mix it with the diced meat. Pour the prepared mixture into molds with the set decoration and refrigerate for 6–8 hours until set.
