Wash the goose, remove excess fat, and rub it all over with salt and pepper. 2. Soak prunes in brandy. 3. Sauté beef mince in olive oil. As soon as the color changes from pink to gray, stop cooking. 4. Chop turkey liver, sauté it, then splash with a small amount of the brandy used for soaking prunes and flambé. 5. Mix together the liver, beef mince, veal mince, and prunes. Add raw eggs and cream. 6. Stuff the goose with the mixture and sew it up tightly. 7. Place the goose in a baking dish and put it in an oven preheated to 250°C (480°F). 8. Every 15–20 minutes, baste the goose with the rendered fat. During cooking, turn the bird several times. Roast for approximately 1.5 to 2 hours—the exact time depends on the size of the bird. To check doneness, pierce the thickest part of the goose with a toothpick and examine the juice. If the juice runs clear, the goose is ready. If the juice is still cloudy but the goose is already browned on the outside, cover it with a sheet of foil and reduce the oven temperature. That's it!
