Festive Baking from Pudding and Orange Juice

Description

Delicious baked goods for the whole family. 1. First, scald the flour with milk. Ingredients: - 100 ml milk - 1 heaping tablespoon (16 g) flour - 5 g salt - 3 tablespoons sugar (40 g) - 1 packet vanilla flavoring Place all ingredients into a small saucepan. Cook over medium heat, stirring vigorously with a whisk until the mixture thickens into a dense pudding-like consistency. 2. Turn off the heat and let it cool down to room temperature. 3. Pour flour into a bowl and add yeast, then mix. 4. Into the bowl with flour, add 3 eggs, 20 ml orange juice, zest of one orange (finely grated), and the cooled pudding—mix well. 5. Add in pieces of diced butter and knead the dough until smooth and elastic (this may take 30–60 minutes). If you have a dough mixer, you'll be done in about 10 minutes. During kneading, if the dough sticks heavily to your hands or work surface, gradually add a little more flour. Once it stops sticking, continue kneading without adding more flour. 6. When the dough becomes smooth and elastic, add raisins and mix until evenly distributed. 7. Transfer the finished dough into a clean, deep bowl—preferably one with a lid. If no lid is available, cover tightly with plastic wrap, and place in the refrigerator to rest and rise for 12 to 24 hours. It's convenient to prepare the dough in the evening and bake it the following day. During this time, the dough will rise well in the refrigerator. 8. After 12–24 hours, remove the dough from the refrigerator and divide it into equal portions. The total dough weight is approximately 1 kg, so divide it into 100 g pieces. 9. Roll each piece into a ball. The cool dough is very easy to shape with warm hands (for more details, see the video). 10. To make a "nest," take two dough balls. Roll each into a long sausage shape. Twist them together into a rope, then shape into a ring, pressing the ends together to seal. Place the formed "nest" onto a baking sheet and let it rise for 30–60 minutes. To prevent drying and ensure good rising, lightly brush the dough with water during this time. 11. Once the "nest" has doubled in size, brush it with beaten egg for shine (you can also sprinkle chopped almonds on top), then place in the oven. Preheat the oven to 220°C (428°F). When you put the buns in, immediately reduce the temperature to 180°C (356°F) and bake for 15–30 minutes. Serve warm with tea or coffee.
