
Classic cake
Description
The pastry is simple and quick to prepare. If you enjoy classic flavor combinations and appreciate traditional culinary methods, you've likely already tried the "Prague" cake. I'm not particularly fond of the store-bought version, so it's worth the effort to make it yourself. This cake is large and sufficient for a big group of guests. Serve it cooled or slightly warm.

Place flour, starch, baking powder, baking soda, and salt into a bowl and mix them together. In another bowl, add eggs and sugar and beat until a white mixture forms.

Gradually add sour cream, condensed milk (reserve 4 tablespoons for the frosting), honey, vanilla extract, and zest of one lemon to the eggs.

Add the wet ingredients to the dry ingredients in three batches, mixing until a uniform consistency is achieved.

Divide the dough into 3 equal parts and place in a preheated oven at 160 degrees. Bake each for about 20 minutes. Transfer the cakes to a wire rack or parchment paper to cool.

Combine the espresso with a tablespoon of boiling water and let it sit for 5 minutes.

Combine the remaining condensed milk and brewed coffee. Melt the mixture over a water bath or in the microwave, stir, and cool to room temperature.

Place the butter into the bowl of a mixer and beat until fluffy. Add the roasted and ground nuts, liqueur, and the cooled coffee mixture.

Place the first cake layer, spread it with cream, then add the second cake layer and another layer of cream. Refrigerate the cake overnight.

Spread the sides and top of the cake. Melt the dark chocolate in the microwave and pour it over the cake, then decorate with pieces of white and milk chocolate. Refrigerate for another hour and serve.
