
Healthy cottage cheese breakfast
Description
The recipe won't take much time. I didn't add sugar, since I served the dish with a sweet syrup, but you can use any sugar substitute if you wish. And if you don't consider yourself a sweet‑tooth, just use any fruit or berries for serving. Serve it cooled or slightly warm.

Prepare all the ingredients.

Transfer the cottage cheese to a deep bowl and add the egg.

Add oat flour or quick-cooking oat flakes.

Slice the ripe banana into rounds.

Using an immersion blender, turn everything into a homogeneous mixture.

Transfer the mixture onto a baking sheet using a tablespoon. Then, with hands moistened in water, shape it into a round form. I did not grease the baking sheet because I used a silicone mat. Bake in the oven at 180 °C for 10 minutes, then flip and bake for another 10–15 minutes.

The number of finished products depends on their thickness and size. On average, it yields 9–14 pieces.

The taste is very close to cheese pancakes, but with a banana aroma. It’s delicious both with sour cream and with honey or any sweet syrup.
