Homemade tea-time pastry. Making a healthy soufflé cake is not difficult at all if you follow this step-by-step recipe. Use sweet berries, and the cake will be even tastier. Serve warm or chilled. Perfect with tea.

Prepare the ingredients.

First, start by preparing the berry soufflé. To do this, place the berries in a blender.

Mash the berries into a puree, which can be strained or left as is for greater naturalness. Soak the gelatin in water according to the instructions on the package, in this recipe at a ratio of 1:6.

Prepare a 16 cm silicone mold, lightly greasing it with refined vegetable oil.

Whip the egg white into a foam, add glucose syrup or any other sweetener or honey. Continue whipping until stiff peaks form.

Slightly warm the berry puree, add the gelatin mixture to it. Stir until completely dissolved. As soon as the gelatin dissolves, immediately remove from the heat. You can heat the gelatin in a microwave and pour it into the berry puree.

Beat until smooth.

Place the silicone mold on a firm surface, fill it with the berry-egg white mixture, and refrigerate until completely set.
