
PP cake with cottage cheese cream
Description
The recipe will not take much of your time. Even on a healthy-eating diet you can eat well and enjoy delicious cakes! You can make the cream from cottage cheese and low-fat sour cream, and the sponge from oat flour ground from oat flakes. Serve cooled or slightly warm.

Prepare the specified ingredients.

Pour the oat flakes into a grinder or the bowl of a food processor. Grind until almost like flour, about 2–4 minutes.

Beat the chicken eggs with honey in the food processor bowl for about 3–5 minutes until light and foamy. Add the oat flour and baking powder. Gently fold in with a whisk or silicone spatula. Let stand for 10 minutes for the flour to absorb the liquid, then mix again.

Lightly grease the multicooker bowl or ovenproof baking dish with vegetable oil, then pour in the prepared batter. Bake the oat sponge cake for about 50 minutes in a multicooker, or for 25–30 minutes in the oven at 180°C. Let it cool.

Mix the cottage cheese with the sour cream and sugar. You may replace the sugar with honey or another sweetener to taste. If you have a blender, blend the mixture until it is smooth and creamy.

Spread the cottage cheese cream over the oat sponge cake and level it. If you wish, you can soak the sponge beforehand with syrup or topping.

Decorate the healthy-eating cake to your taste: with berries, fruit, fresh mint leaves, and so on. Serve chilled.
