Delicious baked goods for the whole family. These healthy cottage cheese pancakes (syrniki) with rice flour are very easy and quick to make. You will need a non-stick frying pan, since they are fried with almost no oil. In my recipe the syrniki are not sweet, but you can add any sugar substitute if you like. Serve the syrniki with sour cream, berries, or fruit. Serve them cooled or slightly warm.
