Healthy sochniki with cottage cheese

Description

The pastry is easy and quick to make. Sochniki are a great choice for breakfast or a snack. This version is especially suitable if you watch your diet carefully, as it contains no sugar and no excess fat. Eat well and healthily. Serve cooled or slightly warm.

    Prepare all ingredients. Preferably use gluten-free flour. Use the sugar substitute you are accustomed to. I use powdered stevia. Instead of vanilla extract, you can use regular vanillin or another flavouring, to taste.

    To make the dough, put the cottage cheese in a bowl, add salt and add an egg, then work the mixture thoroughly until smooth. If you like, add a sugar substitute.

    Add both types of flour and the baking powder. Set aside 20 grams of whole wheat flour for rolling out the dough.

    Knead a soft dough. The dough should slightly stick to your hands, but don't pack it with flour, otherwise the baked goods will turn out stale. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

    To make the filling, put the cottage cheese into a suitable bowl, add sour cream, vanilla and sweetener. Crack in the chicken egg and mix the cottage cheese mixture well.

    Take the dough out of the refrigerator and divide it into 2–3 portions. Roll out one portion into a thin sheet. For rolling out, use the reserved flour.

    Using a cookie cutter or a cup, cut out circles.

    Place about a tablespoon of filling on the edge of each round.

    Fold the second edge of the dough round over the filling, and at the folds press with your fingers on both sides so the round doesn’t unwrap during baking. Do the same for all the pieces. Transfer the parchment with the pieces onto a baking sheet and bake in an oven preheated to 180–190°C for 20–25 minutes.

    Remove the finished sochniki from the oven and let them cool.
