
Healthy fillings for pancakes
Description
Colorful pancakes with tasty fillings — the perfect dish for a hearty and healthy breakfast. They can be served at lunch, dinner, taken with you to the outdoors or to work. The main thing — drizzle the avocado puree with lemon juice if you prepare the filling in advance, so it doesn’t darken. Serve cooled or slightly warm.

Prepare the listed ingredients.

Crack the chicken eggs into a deep container, pour in the milk as well, and add a pinch of salt. Beat all the contents of the container for two minutes.

Add the wheat flour and whisk again. No need to add baking soda! Pour in the olive oil and mix thoroughly. Let it rest for 10 minutes.

Heat the crepe pan and pour some batter onto it, cooking a golden‑brown crepe by frying it for 1 minute on each side. Then prepare the remaining crepes in the same way.

Peel the avocado, remove the pit, cut into cubes and place in a bowl. Mash with a fork, turning it into a puree. Salt it. Combine the cottage cheese with finely chopped green onion and salt.

Spread the avocado filling onto the crepe, then roll it into a cone shape or a roll.

In the same way, fill the pancakes with cottage cheese and green onions. If desired, if the cottage cheese is a bit dry, you can add a little sour cream or thick yogurt to the filling.

Then place two pancakes on top of each other and roll them up into a roulade, cut into 2–3 cm discs. Arrange them on a plate. Top the discs with red caviar.
