
Healthy hummus
Description
Perfect for the table and with drinks. You can take healthy hummus with you to work, on a trip, or to a picnic—it keeps hunger at bay for a long time. It’s especially delicious with slices of garlic or onion bread, sausages, baked or boiled meat, and fish. You can make hummus every day, mixing in different add-ins: pumpkin puree, tahini, sesame seeds, and so on. The appetizer is ready. Serve immediately.

Prepare the listed ingredients. Remember that chickpeas increase 3–4 times in volume, so from 150 grams of dry chickpeas you will get about 450–500 grams of soaked chickpeas.

Pour the chickpeas into a deep container and cover with warm water; leave them like this for at least 4–6 hours, or even better — overnight.

After the specified time, drain the water, transfer the soaked chickpeas to a pot or kazan, add bay leaves, cover with boiling water, and simmer for 1–1.5 hours.

Transfer the boiled chickpeas into the bowl of a blender, food processor, or a deep container if you will be pureeing with an immersion blender. Do not pour out the water — add about 4–5 tablespoons to the bowl.

Add salt, ground black pepper, and ground dried garlic.

Pour in the olive oil and puree everything for about 3–5 minutes until nearly smooth. If the mixture is too thick, add more broth.

Place the prepared healthy hummus in a bowl or on a plate, use a spoon to form indentations in it, drizzle with olive oil, and sprinkle with ground dried thyme or ground sweet paprika and turmeric. Serve.
