Goes wonderfully with tea and coffee. I make this kind of breakfast quite often. I really enjoy the flavour, and calorie‑wise this dish suits any dietary menu. The breakfast turns out filling and delicious! And it cooks very quickly. Serve warm or chilled. Perfect with tea.

    Prepare all the necessary ingredients.

    To make the dough, put the cottage cheese in a bowl, add a little salt, and beat in the egg white. Mix the ingredients thoroughly.

    Add flour, baking powder.

    Knead a soft dough that barely sticks to your hands.

    Form a "boat" shape from the dough. Place it on a heated pan with a good non-stick coating, and fry the flatbread over low heat under a lid for 4-5 minutes.

    Flip the khachapuri over with a spatula.

    Grate the mozzarella cheese on a fine grater and spread it over the baked side. Cover the pan with a lid and cook for another 3 minutes over low heat.
