
Healthy Pelmeni with Eggplant

The recipe won't take much time. You can eat healthy and delicious food without giving up flour-based products, provided, of course, that we use "healthy flour": oat, whole wheat, or rye. In this recipe, I'll show you. Serve hot.

Here are our ingredients for making the dough.

Pour the flour into a bowl, add salt and olive oil, and mix. Then add water and knead until you get a smooth dough that is easy to shape into dumplings. Wrap the dough in plastic wrap and let it rest for 30–40 minutes.

Cut the eggplant lengthwise into 1 cm thick slices, brush with olive oil, and sprinkle with salt, pepper, and basil. Place in a preheated oven at 180 degrees and bake for about 20 minutes.

Remove the skin from the baked eggplant.

And cut the flesh into small cubes. Cut the low-fat cheese into cubes of the same size.

Mix well and you'll get the dumpling filling. Taste it and add whatever you feel is missing.

Roll out the dough into a thin layer and cut it into squares with sides approximately 5 cm.

Place the filling on each square of dough.

And form the dumplings. First, fold them like this, into a triangle. Be sure to seal the edges tightly!

Boil the dumplings in boiling, slightly salted water until the dough is cooked. Mine took 5 minutes from the moment the water started boiling.
