Prepare all the ingredients.

Dice the onion.

Heat a heavy-bottomed sauté pan and cook the yellow onion in vegetable oil until soft. You don't need to brown the onion until golden—it just needs to soften and wilt.

Then pour in the apple cider vinegar, mix everything well, and simmer the onions over low heat for another 15 minutes.

Add the sugar, stir, and cook for a couple more minutes until the sugar has completely dissolved.
