
Black Currant Jam
Description
Winter preserve made at home. Pick black currants from the bush with the stems still attached. Remove the stems from the berries before processing. Also discard leaves and damaged berries. This simple black currant jam recipe starts with washing the berries thoroughly under running water at least twice. 1. Put the washed, cleaned berries in a colander. Set a wide pot of water on the heat, fill it with water, bring to a boil, and lower the colander with the berries into it. Blanch the berries this way for 5 minutes. 2. Rub the blanched berries through a sieve with a wooden spoon. 3. Transfer the finished purée to a cooking pot, add sugar, and stir. Set on the heat and bring to a boil. 4. After it boils, cook over low heat, stirring constantly. Add vanilla and simmer until the desired thickness. 5. Sterilize and dry the jars for the jam. Spoon the finished black currant jam into them and seal with sterile lids. Black currant jam is ready.
