Blueberry Jam

Description

A simple way to make preserves ahead of time. Blueberries take well to canning. They make excellent jam. But for this, blueberries need to be cooked for a long time. The longer they cook, the more moisture evaporates from them, so the jam will be thicker. Jars keep for up to a year in a cool place.

    To make blueberry jam, prepare the necessary ingredients.

    Sort through the berries, removing leaves and stems. Then rinse in plenty of water.

    Drain the berries in a colander and let the excess water drain off.

    Transfer the berries to a cooking pot and sprinkle with sugar.

    Mash the berries so they release their juice.

    Place over heat and warm gradually. The berries will release more juice. The mixture will become more liquid. Stir so the sugar dissolves. Simmer the blueberries for 15–20 minutes over low heat.

    Then purée the entire mixture with an immersion blender. Return to the heat.

    Stirring continuously, continue cooking the berry mixture until it reaches the desired thickness. This will take another 20–40 minutes. The mixture should reduce by half in volume. The preserve will become noticeably thicker.

    Prepare the jars. Wash them thoroughly and sterilize them using any convenient method. You can do this in the oven, in the microwave, or over hot steam.

    Pour the jam into the prepared jars and seal with the lids. Wrap in a warm blanket and leave until cooled.
