1. Rinse the giblets thoroughly and boil them in salted water over low heat. Keep in mind that stomachs take about 1.5 hours to cook, hearts 30–60 minutes, and liver 10–15 minutes. For better flavor, you can add parsley roots.

2. While the offal is boiling, let's prepare the vegetables. Cut the potatoes into small cubes.

3. Cut the carrots into julienne strips.

5. Sauté the vegetables in vegetable oil.

6. Squeeze the garlic using a garlic press.

7. When the giblets are cooked, let them dry slightly, then sauté over medium heat for about 6 minutes. Season with salt and pepper to taste.

9. Layer the ingredients into the pots: first half of the fried vegetables, then the offal, followed by garlic, then the second half of the vegetables. Pour the tomato-sour cream mixture over the pots.
