
Vegan roll
Description
During fasting periods, many sweet lovers suffer without delicious baked goods, but there's no need to. There are plenty of recipes allowing you to prepare tasty pastries without milk, eggs, or butter. Here is a very simple recipe for a lenten poppy seed roll. If you don't like poppy seeds, you can use another filling (thick jam or fruit preserves, a mix of dried fruits, or fresh apples). The main thing is that the dough is fasting-friendly and turns out light and soft.

Sift flour into a bowl, add sugar (regular and vanilla), salt, and dry yeast. Mix well.

Now add warm water and vegetable oil. Knead the dough until it becomes smooth and non-sticky. Cover the dough and leave it in a warm place to rise.

When the dough has risen, knead it once again, then place it back in a warm spot.

Meanwhile, let's prepare the filling. Grind the poppy seeds in a coffee grinder and pour them into a small pot. Add sugar and a glass of boiling water. Cook over low heat until the water has completely evaporated.

It should result in a fairly thick, moist mixture. You can add chopped nuts, raisins, or dried apricots to it. Let the filling cool down.

The dough has risen, divide it into two parts (we will make two rolls). Roll out each part into a thin sheet.

Place half of the filling on each layer of dough and spread it evenly.

And roll them up into a roll. Place the rolls onto a baking sheet greased with vegetable oil or lined with parchment paper. Optionally, brush the tops of the rolls with sweetened water.
