
Vegan pilaf with dried fruits
Description
This recipe won't take much time. 1. Start with the vegetables: peel and cut the carrots into strips, chop the onion. 2. Wash the quince, dry it, and cut into pieces. 3. Heat vegetable oil in a cauldron or saucepan. 4. Add the onion first and fry until translucent. Then add the carrots and quince, continue frying for another 3–5 minutes over medium heat, stirring occasionally. 5. This recipe for lenten pilaf with dried fruits uses raisins and apricots, but you can also add dates or figs, for example. Cut the apricots into thin strips. Add everything to the saucepan. 6. Add the rice and fry for a couple of minutes. 7. Pour in water (in a 1:2 ratio). Season with salt to taste and add spices to taste. 8. Wash the whole garlic head and place it in the center. 9. Once boiling, reduce the heat to the lowest setting, cover with a lid, and let it simmer gently. 10. During cooking, do not stir the lenten pilaf with dried fruits. Just monitor the water level. When the water has completely absorbed, remove the saucepan from the heat and let the dish stand, covered, for another 10–15 minutes. That's it.
