
Vegan pilaf with vegetables
Description
The dish is prepared without unnecessary complications. Making a vegan pilaf is incredibly easy! Simply add your favorite vegetables and spices, as rice goes well with practically everything. Additionally, for a vegetable-based fasting pilaf, you can include some mushrooms: fresh or dried (just make sure to soak the dried ones beforehand). Of course, soy sauce isn't typically associated with pilaf, but the result is delicious. Serve the finished dish immediately.

Rinse the rice and put it on to cook; it should be cooked to a half-done state. While the rice is cooking, you can chop the vegetables: slice the carrot into rounds, finely chop the onion (if using green onion, cut it into small rings), and dice the pepper and celery into small cubes.

Sauté the vegetables in a small amount of oil. It's best to do this in a cauldron or wok, but a saucepan or just a deep frying pan will also work. Then reduce the heat, cover with a lid, and let the vegetables simmer for another 5–7 minutes.

Then add the slightly cooked rice to the vegetables, pour in the soy sauce (you can add more if you like), as well as Tabasco. Salt and pepper to taste, and add spices.

Simmer under the lid for another 10-15 minutes, adding a little water if necessary to prevent burning.

Thanks to the soy sauce, the pilaf will become more flavorful. I recommend serving the ready vegetarian pilaf with vegetables sprinkled with fresh herbs.
