
Vegan pilaf with eggplants

Prepare all the ingredients.

In a cauldron, heat the oil and add the carrots and onions cut into strips.

Fry the vegetables, stirring, until tender.

Add eggplants cut into medium pieces.

Cook everything together for another 5-7 minutes.

Then pour boiling water so that the water almost completely covers the vegetables. Add salt, spices to taste, and cook the vegetables over low heat for 5 minutes.

Add the washed rice and level it with a spoon.

On top of the rice, insert peeled garlic cloves and add water until it covers the rice by about 1.5–2 cm. Cover the pot with a lid and cook over high heat until the rice has almost completely absorbed the liquid. Then gather the rice into a mound in the center, cover it with a plate, place the lid on top of the pot, reduce the heat, and continue cooking the pilaf for another 10 minutes. Let the finished pilaf rest, without opening the lid, for about 20 minutes.
