
Vegan pie with currants
Description
The pastry is simple and quick to prepare. Fasting time is not a time to go hungry or deny yourself something delicious. Treat yourself and your loved ones to a tasty and juicy vegan pie with a succulent, aromatic blackcurrant filling. You can use either fresh or frozen berries for the pie—the taste will be just as good. The recipe for this vegan blackcurrant pie is very easy, and all ingredients are likely already in your kitchen. In a bowl, add a cup of flour, sugar, salt, vanilla sugar, vegetable oil, and very cold water. Mix well.

Now add the remaining flour mixed with baking soda and knead the dough. Wrap the dough in plastic wrap and refrigerate for 1 hour.

Washed and dried currant berries are mixed with sugar and starch.

Divide our dough into two parts. The larger part should be about 2/3 of the entire dough.

Roll out the larger part of the dough into a layer 0.8–1 cm thick and place it into a 20 cm diameter pan, forming the edges. If the pan is not silicone, grease it with vegetable oil.

Place the berry filling.

Roll out the remaining dough and cover the pie with it. Make a small hole in the center to let the steam escape. You can lightly brush the pie with vegetable oil and sprinkle it with sugar. Alternatively, you can dust the cooled baked pie with powdered sugar.

Bake the pie in a preheated oven at 180 degrees for about 35 minutes. Once the pie has cooled down, you can remove it from the mold and serve it :)
