
Vegan berry pie
Description
The baking is simple and quick. I think you haven't tried anything like this before! When my mom's birthday fell during Lent, which she observes, I was a bit puzzled—what could I bake for her? It turned out that this vegan cake is suitable for those fasting—although I personally had to search quite a while to find all the ingredients. But the cake turned out delicious, and everyone loved the recipe for this berry Lenten cake! Do give it a try.

1. The key to this pie is the crispy dough! Here's how to make it: put the coconut oil in the freezer, and in a bowl, mix the flour and starch. Then add water and syrup, mix quickly. Next, add the coconut oil cut into pieces. Knead quickly and vigorously by hand, lifting and turning the dough. Wash the berries and set aside to dry.

2. Roll out the dough into a sheet. Set aside about one third of it for now, and use the remaining dough to make a crust, lining the baking dish with the dough. Sprinkle the berries on top.

3. In a separate bowl, mix the remaining maple syrup with lemon juice, cinnamon, and 1 tbsp of starch. Stir until smooth, then pour over the berries. Using the leftover dough, shape uniform hearts.

4. Place the hearts on top of the berries and bake for 40–50 minutes, until the top turns golden and the berry mixture begins to turn into jelly. Done!
