Description
The recipe won't take much time. It's a classic "Napoleon" cake recipe with thin layers made with soda water and pastry cream. I'll tell you more details below. Can be served with tea or coffee.

Prepare all the ingredients.

Sift the flour. Add salt and mix. Make a depression in the center.

Pour in the sparkling water and stir slightly. Then add the vegetable oil. Knead until you get a smooth dough.

Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for half an hour.

Divide the dough into 10-12 balls.

Roll out each ball into a very thin sheet, 1–2 mm thick. Prick it with a fork to prevent puffing. It's most convenient to roll it out on parchment paper, foil, or a silicone mat.

Preheat the oven to 180 degrees. Bake the layers until golden, about 6-7 minutes. While the layers are still hot, trim them into a round shape (I use a plate). Set the trimmings aside.

Dry the scraps in the oven for a few more minutes. Then crush into fine crumbs.

Place the cooled ready-made cake layers in a stack.

For the cream, mix flour and sugar in a bowl. Pour in 100 ml of oat milk and add a few drops of vanilla syrup. Stir until no lumps remain. You can blend the mixture with a blender.

In a saucepan, bring the remaining oat milk to a boil. Pour in the flour and sugar mixture. Gently stir the cream to prevent anything from sticking to the bottom. Cook until the first bubble appears.

Cool the cream so it's no longer scalding, but still remains warm. Add the vegetable spread, stirring until completely dissolved. Then cool the cream to room temperature.

Spread the cakes with cream.

Sprinkle with crumbs on top. Refrigerate the cake overnight so it soaks well.
