Vegan Coffee Cake
Description
Delicious baked goods for the whole family. Coffee cake can confidently compete with many milk‑ and egg‑based desserts. The cake has a velvety texture, rich flavor, and wonderful aroma. Slightly moist and airy, it resembles not a pie at all, but a full‑fledged pastry or chocolate cake. Take note of the recipe. Serve warm or chilled. Perfect with tea.
Instructions
- 1
Step 1

Prepare all the ingredients.
- 2
Step 2

Prepare coffee and let it cool a bit.
- 3
Step 3

In a deep bowl, combine flour, sugar, baking powder, salt, and vanillin.
- 4
Step 4

Add cocoa.
- 5
Step 5

Mix everything together and add lemon juice. The acidity in dishes that lack eggs strengthens the gluten in the flour, resulting in a lighter, more airy bake.

Step 6

Then add coffee and butter.
- 7
Step 7

Mix everything until it reaches a uniform consistency.
- 8
Step 8

Pour the batter into a butter‑greased baking dish. Sprinkle the bottom and sides of the dish in advance with flour or semolina. Bake in the oven at 175 °C for about 30–35 minutes.
- 9
Step 9

Allow the finished vegan coffee cake to cool in the pan first, then carefully remove it and, if desired, dust with powdered sugar.
- 10
Step 10

Ready. Serve at the table.
