Vegan yeast pie

Description

Homemade baked goods for tea. Fasting pies can be sweet or savory. I like making hearty pies with delicious fillings, for example, with cabbage, mushrooms, or potatoes. For making a fasting yeast pie, I used a small cabbage head (almost half a kilogram), a couple of carrots, and some onion for the filling. By the way, the dough is a universal fasting yeast dough—you can make a sweet pie, for example, with jam. Serve warm or chilled. Perfect with tea.

    Start with the dough: prepare the sponge. Dissolve the yeast in a glass of warm water, add a tablespoon of sugar and half a glass of flour (it's better to sift the flour so the sponge rises well). Mix everything and let the sponge rise (this will take about 30-40 minutes, maybe less).

    Then add a teaspoon of salt, another tablespoon of sugar, and about 50 grams of vegetable oil to the risen sponge. Mix everything thoroughly and gradually start adding sifted flour, kneading the dough.

    The dough should be soft and not stick to your hands.

    Shape the dough into a ball and cover it with a towel, let it rise.

    While the dough is rising, prepare the filling. Grate the carrots on a grater and finely chop the onion. First sauté the onion, then add the carrots and fry them together with vegetable oil for 5–7 minutes. Meanwhile, shred the cabbage and add it to the vegetables in the pan. Fry everything for about 10 minutes, then simmer under a closed lid over low heat for 15 minutes, adding spices to taste. Let the prepared filling cool down. Now we'll start assembling the pie: the dough has risen, knead it again and divide it into two parts.

    Roll out a flatbread from the larger part of the dough.

    Grease the baking pan with vegetable oil and sprinkle with ground breadcrumbs (or simply with breadcrumbs). Place the dough and form fairly high edges.

    Roll out the smaller part of the dough into a flatbread and cut it into equal strips.

    Place the filling into the pie and cover it with strips of dough, attaching them to the edges.

    I recommend laying the strips in squares—alternating or crosswise, as shown in the photo.

    Tuck the edges inward, and use the leftover dough to make decorations. Let the pie rest for about 30 minutes. Then bake it in a preheated oven at 180°C for 20 minutes, until golden brown.
