
Lenten flaky pastries with kohlrabi

When preparing such pastries, it is important to roll the dough thinly and not forget to brush its surface with butter before each folding and layering with the filling, which can also be finely chopped onion or other vegetables as desired The baking is ready. Prepare the necessary ingredients, wash the green onions and slice them into rings, clean the cabbage of its tough outer leaves and cut the head into large pieces.

In a suitable bowl, pour sifted first‑grade flour (start with 170 g) and whole‑grain flour, as well as salt (about 0.5 teaspoon).

Combine the dry ingredients and pour in the water, mixing the dough with a spoon.

Divide the dough into 6 equal parts and roll one of them into an elongated sheet 1‑2 mm thick. Brush the rolled sheet with sunflower oil using a brush and spread a portion of the filling in its central part.
