
Vegan ravioli
Description
Ravioli are relatives of Russian dumplings. They can be made with various fillings: meat, fish, or cheese. But in order to eat deliciously during fasting periods, we'll need a fasting-friendly filling. It can be made from mushrooms, cabbage, or potatoes. Today, we'll prepare a filling with pumpkin and peas, getting closer to the Italian version. Making fasting ravioli is not difficult at all—convince yourself by reading the recipe and viewing the photos.

Peel the pumpkin and cut it into small pieces. Peel and finely dice the onion.

Sauté the onion in vegetable oil until translucent.

Add pieces of pumpkin and peas. Sauté and simmer until the pumpkin is cooked. Add salt to taste. You can also add black ground pepper and dried aromatic herbs to taste.

Then we blend our ravioli filling with a blender and set it aside to cool for now.

While the filling is cooling, prepare the dough. Add a pinch of salt and vegetable oil to the sifted flour. Gradually pour in water (a little more than half a cup). Knead a soft, elastic dough that does not stick to your hands. Let the dough rest for about 10 minutes.

Cut off a piece of dough and roll it out into a thin sheet 2-3 mm thick.

Cut rectangular sheets from the rolled dough (measuring 9 by 6 cm). Moisten one edge of the sheet with water so the dough sticks together better.

Mentally divide the dough sheet in half, and place a teaspoon of filling at equal distances along the center of one half.

Cover the filling with the second half of the dough. First, seal the sides, press out the air from the spaces between the filling, then press the long edge of the dough sheet. Next, cut the ravioli with a fluted knife and trim the edges. You can press the edges of the ravioli with the tines of a fork: it looks nice and ensures they won't come apart.

Boil ravioli in salted boiling water for 3 to 5 minutes. The time depends on the thickness of the dough.

Dice the tomato into small cubes and lightly sauté in a pan with vegetable oil. You can add a little salt to taste. Add the ravioli sauce, mix well, and serve after about 2 minutes.
