Chop the walnuts not too coarsely. If you don't have this particular type of nut, you can substitute them with almonds, cashews, or hazelnuts. It's best to pre-toast raw nuts in a dry skillet for several minutes to make them even more aromatic.

Take silicone molds of any size. To give the pastries the shape of classic brownies, you can use rectangular molds. By the way, you can also bake this batter in paper cups, making them portion-sized. Sprinkle a little crushed nuts into the bottom of each mold, and set the rest aside for the batter.

Now it's time for the dough. Mix all the dry ingredients in a bowl. Add salt and baking soda "a pinch at a time" to avoid overdoing it. There's no need to pre-activate the baking soda, as the acidic apple puree will do that. Stir all the ingredients with a spoon, then add the apple puree. If it seems too thick, simply thin it with some cold boiled water. Add the remaining nuts and thoroughly mix all the ingredients until the dough is smooth and uniform.

Place the dough into molds. There's no need to preheat the oven, as these pastries bake perfectly in the microwave. Put the molds inside and bake at maximum power for four minutes. Touch the pastries with your finger; they should not feel sticky, as stickiness indicates they are not fully baked.

Let the finished pastries cool, remove them from the molds, and cut into square portion pieces. Serve with tea or coffee. Before serving, you can dust the pastries with cinnamon or powdered sugar.
