Vegan apple pastries

Description

To make vegan apple buns, I suggest preparing yeast dough using water and no eggs. I prefer using quick dry yeast—it's much more convenient: just add it straight into the flour and start kneading the dough. You can add nuts or raisins to the apples (in the filling); I went with raisins.

    Knead a regular lean yeast dough: if using dry yeast, add it directly to the flour, then add oil, salt, sugar, and water. Knead the dough. The dough should be firm yet soft and elastic, like dough for buns. You might need a little less or a little more water. Let the dough rest and rise (about 30 minutes). Finished dough will be easy to shape into buns.

    While the dough is rising, you'll have time to prepare the filling. Peel the apples, remove the cores, and finely dice the flesh. Add raisins (it's best to soak them beforehand so they're soft), cinnamon, and powdered sugar. By the way, you can even lightly sauté the apples with sugar if you'd like. But you can also use them raw in the buns.

    The dough has risen, so you can start shaping the buns. Place a teaspoon (or two, as you prefer) of filling into each piece and carefully but firmly seal the edges. Arrange the buns on a baking sheet lined with parchment paper, and optionally brush them with sweetened water. Let them rest for another 10 minutes. Meanwhile, preheat the oven to 180°C. Bake the buns for 30 minutes.

    Let the ready vegan apple buns cool, sprinkle with powdered sugar, and serve.
