
Lenten Pirozhki with Jam

Prepare all the ingredients.

In a deep bowl, combine half the sugar, 1 tbsp flour, and the yeast.

Pour in warm water and mix everything together. Cover the bowl with plastic wrap or a lid and let stand for 10 minutes.

The yeast should rise with a fluffy foam cap.

Then add the second portion of sugar, vanillin, salt, and vegetable oil. Mix everything together.

Begin sifting the flour into the bowl in portions.

Gradually knead the dough. It should be soft, smooth, and slightly sticky to your hands. If needed, you can add a little more flour, but don’t work in too much flour and make the dough heavy.

Roll the ready dough into a ball and place it in a bowl greased with oil. Cover with plastic wrap and leave in a warm place to rise for 1 hour.

The dough should rise and double in size.

Divide the risen dough into portion-sized pieces of approximately 40–50 grams. Roll them into balls, cover with a towel, and let them rest for 10 minutes.

Roll each ball on a flour-dusted surface.

Place the jam filling in the center.

Gather the edges toward the center and pinch them together firmly.

Turn the pastry seam side down, tuck in the edges, and smooth.

Place the pies on a silicone baking mat or parchment paper. Cover the pies with a towel and let them rise for 10–12 minutes.

Brush the pies with water and bake in an oven preheated to 200°C for 10–15 minutes until golden brown.

Brew a strong tea (1 tsp loose black tea per 100 ml) and add 2 tbsp sugar. Stir until dissolved and let cool.
