
Lentil patties (vegan)
Description
The recipe won't take much time. Lentils are excellent not only in soups; they are a great legume rich in protein and low in calories. To make lentil cutlets, I recommend using hulled lentils. We'll be grinding them through a meat grinder anyway, but without their husks, the mixture will be much more tender. The main thing is to soak the lentils beforehand. Serve hot.

Soak the lentils in water beforehand, preferably overnight.

As you can see, the lentils have absorbed the water and increased in size. It's good if the lentils are hulled; otherwise, you might have to remove small husks. Finely dice four small onions and sauté until soft and golden, then let them cool.

Then pass the lentils through a meat grinder, add onion, and pass through the grinder once again. Next, add semolina and spices. Knead the mixture to form a mince for cutlets.

Shape the patties; I recommend slightly moistening your hands.

Fry the patties on a preheated pan with vegetable oil for 5 minutes on each side until golden brown.

When you flip it to the other side, close the lid.

Serve the ready-made lentil cutlets with sauerkraut and buckwheat, for example.
