
Lenten tartlets made from shortcrust pastry

Prepare all the ingredients. Put the water in the freezer in advance to make it ice-cold. The colder, the better.

Pour the ice water and vegetable oil into a tall container, add salt.

Beat with a mixer or blender until a uniform white emulsion forms.

Sift the flour into a large bowl, pour in the emulsion.

Knead the dough thoroughly until smooth. Wrap in plastic wrap and refrigerate for half an hour.

Take the dough out of the refrigerator, roll it out into a 2-3 mm thick sheet. Cut out circles the size of the future tartlets.

Place the circles into baking molds. Prick with a fork. Fill the baskets with dry peas or beans. Bake for 10 minutes at 180 degrees, then for another 10-14 minutes without the peas.
