
Vegan potato cutlets with mushrooms
Description
The recipe won't take much time. A fasting dish doesn't have to be tasteless, as such dishes are often perceived. Potato zrazy with mushroom filling turn out very delicious and are easy to prepare. Serve hot.

1. Place the peeled and chopped potatoes in a pot with cold water and bring to a boil. Add salt and cook until tender, 25-30 minutes. Once cooked, drain the water. Mash the potatoes until smooth, then let cool slightly.

2. Prepare the filling. We need fresh mushrooms. You can use oyster mushrooms, button mushrooms, or any other mushrooms of your choice. Wash the mushrooms and cut them into small pieces. Heat oil in a frying pan and add the mushrooms. Fry the mushrooms until cooked through, for 10-15 minutes.

3. To prevent the potato from sticking to your hands, wet your hands with cold water and divide the mashed potato into 8 portions. Shape each portion into a patty. Place a mushroom filling on each patty.

4. With wet hands, take the patty with filling onto your palm and shape it into an oval cutlet, enclosing the filling inside the patty.

5. Roll the zrazy in breadcrumbs and place them on a baking sheet. The sheet should be greased beforehand. Bake in an oven preheated to 200 degrees for 20–25 minutes. Sauté the onion in vegetable oil. The zrazy can be basted with this oil.
