In this step-by-step recipe, you will learn important nuances,

Instructions

  1. 1

    Step 1

    Step 1

    1. Prepare the cabbage leaves. Cut off the core from the cabbage and place the head into a large pot of water. Wait for the water to boil. Add salt (a teaspoon is enough). Reduce the heat and cover the pot with a lid. Check the doneness of the top leaf with a fork, then separate the cabbage into individual leaves. Do not discard the water—we'll use it to braise the cabbage rolls.

  2. 2

    Step 2

    Step 2

    2. The rice needs to be cooked until half-done. I cooked it in a multicooker, using a 1:1 ratio of rice to water, and don't forget to add salt to the water. Spread the rice onto a plate to cool.

  3. 3

    Step 3

    Step 3

    3. Now prepare the filling. Finely chop the mushrooms and onion. Place the mushrooms into a heated pan, add salt, and simmer until almost all the liquid has evaporated. Transfer the mushrooms to another container and fry the onion in the same pan. When the onion begins to turn golden, mix it with the mushrooms.

  4. 4

    Step 4

    Step 4

    4. Add the cooled rice to the pan, mix well, and let the filling sauté for 5 minutes over medium heat. Check for salt and spices.

  5. 5

    Step 5

    Step 5

    5. Start preparing the dressing. Add a little more salt, bay leaf, ground red pepper, allspice, coriander (either ground or seeds) to the water in which the cabbage was boiled. Also add tomato paste or ketchup (your choice) to the water.

  6. 6

    Step 6

    Step 6

    6. Trim the tough central vein from each cabbage leaf to make the cabbage rolls softer. Then start adding the filling and rolling up the cabbage rolls, tucking the edges of the leaf inward. Or, simply roll them however you prefer.

  7. 7

    Step 7

    Step 7

    7. Line the bottom of the pot (cauldron, saucepan) with cabbage leaves to prevent burning. Place all the cabbage rolls into the container and cover the top with cabbage leaves as well. Then pour the sauce over everything, making sure it covers the leaves by 2-3 cm.

  8. 8

    Step 8

    Step 8

    8. I cook cabbage rolls in a multicooker using the "Stewing" mode for 2.5 hours. They will take the same amount of time to cook in a pot or saucepan on the stove, and about 2 hours in the oven.

  9. 9

    Step 9

    Step 9

    9. Before serving, you can sprinkle the stuffed cabbage rolls with fresh herbs.
