
Vegan cabbage rolls with mushrooms
Description
The recipe won't take much time. For a main course at lunch or dinner, vegetarian cabbage rolls with mushrooms are simply perfect. If you don't have fresh tomatoes on hand, you can easily replace them with tomato sauce or paste, for example. Besides rice, by the way, you can try another grain to your taste. Serve hot.

1. First, prepare the filling. Peel the onion and carrot. Wash and dry the mushrooms. Finely chop everything. Heat vegetable oil in a skillet and sauté all ingredients over medium heat until cooked through. Season with salt to taste. You can also add spices and dried herbs to the recipe for mushroom-stuffed cabbage rolls.

2. Cook the rice in salted water until done. Place the cabbage in a saucepan with boiling water for 4-5 minutes. Cool down, then remove the leaves. Trim off the tough parts or lightly tenderize them with a mallet.

3. In a deep bowl, combine the cooked rice with the sautéed mushrooms. Add salt and spices to taste, if desired. Mix everything well.

4. Take a cabbage leaf, place the filling in the center, and roll it up tightly. Peel the tomatoes and chop them finely. Simmer slightly in a pan or skillet. Add a spoonful of flour and a pinch of salt.

5. Place them in a heatproof dish and pour the tomato sauce over. Bake the vegetarian cabbage rolls with mushrooms at home for 35-45 minutes (depending on their size).
