
Vegan Chebureks with Pumpkin
Description
Perfect with tea and coffee. Vegan chebureki are very easy to fry with a pumpkin filling. Make the dough with water and a bit of vegan oil. Then prepare the filling from fried pumpkin and onion. The pastry is ready. Serve at the table.

Prepare all the ingredients.

Sift the flour into a deep container and add salt to taste; I use about 1/4 tsp of salt.

Pour the water and vegetable oil into the dough.

Knead a firm, elastic dough. Let it rest for 15–20 minutes, covered with a towel.

For the filling, peel the onion and the pumpkin. Dice the onion into small cubes, and grate the pumpkin using a coarse grater.

Sauté the pumpkin with onion in a pan, adding a little oil. Fry for 3‑4 minutes, stirring. Add salt and pepper to taste.

Divide the dough into 5–6 parts, and roll each part thinly with a rolling pin.

Spread 1–1.5 Tbsp of the cooled filling onto the dough.

Pinch the chebureks.

Fry the chebureks in a pan with butter for 1–1.5 minutes on each side until golden brown.

Serve the ready pumpkin chebureks at the table.
